A humble but beautiful bowl of blue corn mush that tastes earthy, nourishing and deeply tied to Diné food traditions.

Ingredients
- Roasted blue cornmeal – 150 g
- Juniper ash (optional) – 1 tsp
- Water – 750 ml
- Salt – 1/2 tsp
- Maple syrup or honey (optional) – to serve
Method
Bring 500 ml of the water to a boil in a saucepan.
Mix the blue cornmeal with the remaining cold water, the juniper ash if using, and the salt until smooth.
Pour the mixture into the boiling water while stirring constantly.
Lower the heat and keep stirring for 3 to 5 minutes until the mush thickens and looks glossy.
Cook it gently for 5 more minutes so the cornmeal is fully tender.
Serve warm, plain or with a little maple syrup or honey.
