A richer sashimi-style bowl with salmon, tuna, eel and scallop feels festive and polished, especially when the toppings are cut with care.

Ingredients
- Sushi rice – 320 g
- Salmon, sashimi grade – 150 g
- Tuna, sashimi grade – 150 g
- Smoked eel – 100 g
- Scallops, sashimi grade – 4
- Edamame – 120 g
- Avocado – 1
- Soy sauce – 3 tbsp
- Mirin – 1 tbsp
- Wasabi – to taste
- Sesame seeds – 2 tsp
- Nori strips – 2 tbsp
Method
STEP 1
Prepare the sushi rice and leave it to cool. Mix the soy sauce with the mirin so you have a simple dressing ready to go.
STEP 2
Slice the salmon and tuna cleanly, cut the eel into bite-sized pieces and slice the scallops thinly. Keep everything cold until the last possible moment.
STEP 3
Arrange the rice in wide bowls, then add the fish and scallops in distinct sections rather than piling them up. Add the edamame and avocado in the remaining spaces.
STEP 4
Serve with the soy-mirin dressing, sesame, nori and a little wasabi on the side so everyone can season the bowl to their own taste.
