A generous sharing salad with warm goat cheese, bacon, nuts, fruit and a silky honey dressing, ideal as a lunch platter or light dinner.
Serves: 4 people

Ingredients
- Goat cheese rounds – 8
- Bacon lardons – 150 g
- Mixed salad leaves – 200 g
- Pear, in wedges – 1
- Apple, in thin slices – 1
- Walnuts and pecans – 60 g
- Cherry tomatoes – 16
- Croutons – 50 g
- Runny honey – 1.5 tbsp
- Olive oil – 3 tbsp
- Balsamic vinegar – 1.5 tbsp
- Mustard – 1 tsp
- Black pepper – to taste
Method
STAP 1
Toast the nuts lightly and cook the bacon until crisp.
STAP 2
Warm the goat cheese for 5 to 6 minutes in the oven.
STAP 3
Arrange the salad leaves on a large platter and add pear, apple, tomatoes and croutons.
STAP 4
Scatter over the bacon and nuts, then place the warm goat cheese on top.
STAP 5
Whisk honey, oil, balsamic and mustard together and spoon over the platter just before serving.
