This version of damper pairs nutty wattleseed with gubinge, also known as Kakadu plum, for a more aromatic and slightly tangy loaf. It is rustic, fragrant and especially good served warm.

Ingredients
- Self-raising flour – 500 g
- Ground wattleseed – 2 tbsp
- Gubinge powder – 1 tsp
- Salt – 1 tsp
- Butter – 60 g
- Milk – 300 ml
Method
1. Mix the flour with the wattleseed, gubinge powder and salt so the bush ingredients are evenly distributed.
2. Rub in the butter, then add the milk and bring everything together into a soft dough.
3. Shape into a round loaf and score the top. Scoring is important because this quick bread expands fast in the oven.
4. Bake until browned and cooked through.
5. Let the loaf cool briefly before slicing. Serve warm with butter, soup or a savoury spread.
