Clean, crisp and refreshing, these thin cucumber rolls are the simplest way to bring classic sushi flavors to the table.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Cucumber – 1 large
- Toasted sesame seeds – 1 tsp
Method
Cook and season the rice, then cool.
Cut the cucumber into long narrow sticks.
Place half a nori sheet on a rolling mat, spread a thin layer of rice, add cucumber and roll tightly.
Slice into small rounds and serve with soy sauce.
