This Cuban country garlic soup is simple but full of flavour, with garlic, bread, egg and paprika in a light chicken broth.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • olive oil – 3 tbsp
  • garlic, thinly sliced – 8 cloves
  • stale bread, cubed – 3 cups
  • smoked paprika – 1 tsp
  • chicken stock – 7 cups
  • eggs – 4
  • parsley, chopped – 1/4 cup
  • salt – to taste
  • black pepper – to taste

Method

1. Heat the olive oil gently and fry the sliced garlic until fragrant but not dark.
2. Add the bread cubes and paprika and stir until the bread absorbs some of the oil.
3. Pour in the stock and simmer for 10 minutes.
4. Crack in the eggs one by one and poach them in the hot broth for 3 to 4 minutes.
5. Season with salt and pepper and scatter with parsley before serving.
