This quick cold noodle salad balances sweet, sharp and crunchy elements with prawns for an easy supper.
Serves: 2 people

Ingredients
- rice noodles – 100 g
- cooked prawns – 150 g
- carrot – 1
- cucumber – 1
- lime juice – 1 tbsp
- fish sauce – 1 tbsp
- sweet chilli sauce – 1 tbsp
- coriander – 1 handful
- peanuts – 1 handful
Method
STEP 1
Soak the noodles in boiling water until tender, then rinse them under cold water and drain thoroughly.
STEP 2
Cut the carrot and cucumber into thin strips so the salad stays crisp and easy to eat.
STEP 3
Mix the lime juice, fish sauce and sweet chilli sauce into a quick dressing.
STEP 4
Put the noodles, vegetables and prawns in a bowl and pour over the dressing.
STEP 5
Toss well so the flavours spread through the salad.
STEP 6
Scatter over coriander and peanuts just before serving.
