A striking black risotto coloured with cuttlefish ink, deeply savoury and packed with seafood character.
What is crni rižot?
Crni rižot is Croatian black risotto coloured with squid ink. The flavour is savoury, briny and closely linked to the Adriatic coast. It is a striking dish that combines simplicity with the taste of the sea.

Ingredients
- Risotto rice – 320 g
- Squid rings – 400 g
- Onion – 1
- Garlic – 3 cloves
- Olive oil – 3 tbsp
- White wine – 150 ml
- Fish stock – 1 litre
- Cuttlefish ink – 2 sachets
- Butter – 30 g
- Parsley – 2 tbsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Cook the onion and garlic in olive oil until soft. Add the squid and cook for 2 minutes.
STEP 2
Stir in the rice and let it turn glossy. Pour in the wine and let it evaporate.
STEP 3
Add the hot stock a ladle at a time, stirring often. After about 10 minutes, mix in the cuttlefish ink.
STEP 4
Continue cooking until the rice is creamy and just tender. Stir in the butter and parsley, then season and serve immediately.
