A warm salad topped with crispy baked or pan-fried goat cheese rounds.
Serves: 4 people

Ingredients
- Mixed lettuce – 150 g
- Goat cheese log – 200 g
- Flour – 40 g
- Egg – 1
- Breadcrumbs – 60 g
- Olive oil – 3 tbsp
- Cherry tomatoes – 150 g
- Walnuts – 50 g
- Honey – 1 tsp
- White wine vinegar – 1.5 tbsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Slice the goat cheese log. Coat the slices in flour, egg and breadcrumbs.
STEP 2
Pan-fry the cheese until golden.
STEP 3
Arrange the salad with tomatoes and walnuts, whisk a honey vinaigrette and top with the warm goat cheese.
