Crispy Chorizo Chickpea Cups

Smoky chorizo and chickpeas make a bold little amuse with warmth, spice and plenty of tapas character.

Serves: 6 people

Preparation time: 9 min

Ingredients

  • Chorizo – 120 g
  • Cooked chickpeas – 160 g
  • Smoked paprika – 1/2 tsp
  • Mini lettuce leaves – 12
  • Parsley – 1 tbsp

Method

STEP 1
Dice the chorizo very small and fry it until it releases its oil and turns lightly crisp.
STEP 2
Add the chickpeas and smoked paprika and cook for 2 to 3 minutes so the flavours coat the chickpeas.
STEP 3
Spoon the warm mixture into mini lettuce leaves.
STEP 4
Scatter with parsley.
STEP 5
Serve immediately while the filling is still warm and the leaves are crisp.
