Crème Ninon is a classic French pea soup with a velvety texture and a festive feel. Mint and crème fraîche keep the soup fresh and light.

Ingredients
- butter – 1 1/2 tbsp
- shallots, minced – 2
- peas – 1 lb
- vegetable stock – 3 3/4 cups
- heavy cream – 1/2 cup
- crème fraîche – 1/4 cup
- fresh mint, chopped – 2 tbsp
- sugar – 1/4 tsp
- salt – 3/4 tsp
- white pepper – 1/4 tsp
Method
1. Melt the butter and cook the shallots over low heat for 2 minutes.
2. Add the peas, pour in the stock and simmer gently for 10 minutes.
3. Blend the soup until very smooth and pass it through a sieve if you want an extra fine texture.
4. Stir in the cream, crème fraîche and mint and warm through without boiling.
5. Season with salt and white pepper. Some classic versions use a pinch of sugar, but it can be omitted.
