Avocado soup is unusual but lovely: velvety, mild and easily brightened with lime, coriander and a hint of chilli.
Serves: 4 people
Preparation time: 30 min
Ingredients
- Avocados – 2
- Fresh coriander – 2 sprigs
- Red chilli – 1
- Lime – 1/2
- Vegetable or chicken stock – 1 litre
- Crème fraîche – 250 ml
- Salt – to taste
- Black pepper – to taste
Method
1. Scoop the avocado flesh into a blender with the coriander, chilli and lime juice.
2. Add part of the stock and blend until very smooth.
3. Warm gently with the remaining stock and crème fraîche, but do not let it boil hard or the colour may dull.
4. Season carefully and serve in small bowls so the soup stays elegant and not too heavy.
