Inspired by Denny's salad with grilled chicken, glazed pecans, apple and dried cranberries on spring mix with balsamic vinaigrette.
Serves: 2 people

Ingredients
- Spring mix – 180 g
- Grilled chicken breast – 300 g
- Apple – 1 large
- Dried cranberries – 60 g
- Pecans – 75 g
- Honey – 1 tbsp
- Balsamic vinegar – 2 tbsp
- Olive oil – 4 tbsp
- Dijon mustard – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Toast the pecans in a dry pan, then add the honey and let them glaze lightly. Cool on baking paper.
STEP 2
Whisk balsamic vinegar, olive oil and Dijon into a dressing. Season to taste.
STEP 3
Arrange spring mix on a platter and top with sliced grilled chicken, apple, cranberries and glazed pecans.
STEP 4
Drizzle with the balsamic dressing just before serving.
