A protein-packed bake with eggs, cottage cheese and spinach.

Ingredients
- Eggs – 8
- Cottage cheese – 300 g
- Baby spinach – 150 g
- Red bell pepper – 1
- Spring onions – 3
- Cheddar – 75 g
- Black pepper – to taste
Method
STEP 1 Whisk the eggs and stir in cottage cheese.
STEP 2 Add chopped pepper, spring onions and spinach.
STEP 3 Pour into a baking dish and top with cheddar.
STEP 4 Bake at 180°C for 30 minutes.
