Cod with tomato olive sauce

A simple fish dish with cod, tomatoes, olives and oregano.

Serves: 4 people

Preparation time: 13 min

Ingredients

  • Cod fillets – 4
  • Cherry tomatoes – 300 g
  • Black olives – 100 g
  • Onion – 1
  • Garlic – 2 cloves
  • Olive oil – 2 tbsp
  • Dried oregano – 1 tsp
  • Parsley – 2 tbsp

Method

STEP 1 Sauté onion and garlic in olive oil.
STEP 2 Add tomatoes, olives and oregano and simmer for 8 minutes.
STEP 3 Nestle in the cod and cook until just done.
STEP 4 Sprinkle with parsley and serve.
