A hearty salad with chicken, bacon, egg, avocado and blue cheese that works well as a gluten-free lunch or dinner.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Romaine lettuce – 2 heads
  • Cooked chicken – 300 g
  • Bacon – 8 slices
  • Eggs – 4
  • Avocado – 1
  • Cherry tomatoes – 250 g
  • Blue cheese – 100 g
  • Olive oil – 3 tbsp
  • Red wine vinegar – 1 tbsp
  • Dijon mustard – 1 tsp

Method

STEP 1 Cook the bacon until crisp and boil the eggs.
STEP 2 Arrange lettuce in a bowl and top with rows of chicken, bacon, egg, avocado, tomatoes and blue cheese.
STEP 3 Whisk oil, vinegar and mustard and serve with the salad.
