Sauerkraut mash is one of the great Dutch cold-weather dishes, with soft potatoes, tangy kraut and smoky bacon in every forkful.
Serves: 4 people

Ingredients
- Floury potatoes – 1.2 kg
- Sauerkraut – 500 g
- Bacon lardons – 150 g
- Butter – 40 g
- Milk – 100 ml
- Bay leaf – 1
- Juniper berries – 4
- Salt and black pepper – to taste
Method
1. Cook the sauerkraut separately with the bay leaf and juniper berries so it turns mellow and tender. 2. Meanwhile boil the potatoes until completely soft and fry the bacon lardons until lightly crisp. 3. Drain the potatoes and mash them with butter and milk. Remove the aromatics from the sauerkraut and stamp the kraut through the potatoes. 4. Fold in the bacon, season carefully with pepper and only a little salt, and serve the mash straight from the pan.
