Fresh oysters under Worcestershire sauce and crisp bacon, flashed under the grill: this is one of those old-school Australian starters that never really disappears.

Ingredients
- Rock salt – 2 cups
- Oysters, shucked in half shell – 24
- Worcestershire sauce – 2 tbsp
- Bacon, diced – 175 g
- Flat-leaf parsley – 2 tbsp
- Lemon wedges – to serve
Method
1. Preheat the grill to medium-high. Spread a thick layer of rock salt over a baking tray so the oyster shells sit steady.
2. Arrange the oysters in their half shells on the salt.
3. Spoon or drizzle Worcestershire sauce over each oyster, then top with diced bacon.
4. Grill for 5 to 8 minutes, just until the oysters are hot and the bacon is crisp.
5. Finish with chopped parsley and serve immediately with lemon wedges.
