Creamy chickpeas, tahini, lemon and olive oil make hummus one of those starters that is both generous and deceptively simple.
Serves: 4 people

Ingredients
- Cooked chickpeas – 400 g
- Tahini – 4 tbsp
- Lemon juice – 2 tbsp
- Garlic – 1 clove
- Olive oil – 2 tbsp
- Cold water – 3 tbsp
- Ground cumin – 0.5 tsp
- Paprika – 0.5 tsp
- Salt – to taste
Method
1. Blend the chickpeas with tahini, lemon juice, garlic, olive oil and a splash of cold water.
2. Keep mixing until the hummus becomes really creamy. Add a little extra water if needed rather than more oil.
3. Season with cumin and salt, then spoon into a shallow bowl.
4. Finish with olive oil and paprika and serve with bread or raw vegetables as a starter.
