Good hummus should be creamy, nutty and bright with lemon, and this classic version does exactly that. It works as a dip, but it is also excellent as a generous spread on bread loaded with crunchy vegetables.
Serves: 6 people
Preparation time: 20 min
Ingredients
- Chickpeas – 400 g, drained
- Tahini – 4 tbsp
- Lemon juice – 3 tbsp
- Garlic – 1 clove
- Olive oil – 2 tbsp
- Ground cumin – 0.5 tsp
- Cold water – 2 to 4 tbsp
- Salt – to taste
- Paprika – for serving
Method
STEP 1
Blend the chickpeas with tahini, lemon juice, garlic, olive oil and cumin until the mixture starts to become smooth.
STEP 2
Add a little cold water while blending so the hummus turns light and creamy instead of heavy.
STEP 3
Taste and season with salt, adding extra lemon if you want a fresher finish.
STEP 4
Spoon the hummus into a bowl, drizzle with olive oil and use it on bread, toast or warm pita.
