Classic Guacamole

Classic guacamole is creamy, fresh and full of life from lime, coriander and a little chilli. Spread on toasted bread, it instantly turns a simple lunch into something sunny and satisfying.

Serves: 4 people

Preparation time: 20 min

Ingredients

  • Ripe avocados – 2
  • Lime juice – 2 tbsp
  • Red onion – 0.5 small, finely chopped
  • Tomato – 1 small, deseeded and diced
  • Fresh coriander – 2 tbsp, chopped
  • Red chilli – 0.5 small, finely chopped
  • Salt – to taste

Method

STEP 1
Halve the avocados, remove the stones and scoop the flesh into a bowl while it is still beautifully ripe.
STEP 2
Mash with the lime juice until creamy but not completely smooth, because a little texture makes it taste fresher.
STEP 3
Stir in the onion, tomato, coriander and chilli and season with salt.
STEP 4
Use the guacamole straight away on toast or in sandwiches so the colour and flavour stay at their best.
