Damper is a simple Australian soda-style bread with a tender crumb and rustic crust. It is an excellent starter bread because you can make it quickly without yeast and still learn how dough texture should feel.

Serves: 8 people

Preparation time: 30 min

Ingredients

  • Self-raising flour – 500 g
  • Salt – 1 tsp
  • Butter – 60 g
  • Milk – 250 ml
  • Water – 125 ml

Method

1. Heat the oven and line a tray or Dutch oven. Mix the flour and salt, then rub in the butter until the mixture looks sandy.
2. Add the milk and enough water to bring the dough together. The dough should be soft but not sticky.
3. Turn it onto a floured surface and knead only briefly, just until it forms a smooth round. Overworking it makes the bread heavy.
4. Shape into a round loaf and cut a deep cross in the top so the heat can reach the centre.
5. Bake until risen and golden. Tap the base to check for a hollow sound, then let the damper cool slightly before slicing.
