This Christmas log combines airy chocolate mousse with red berries for a dessert that feels rich but never flat. The fruit lifts the mousse and gives the finished log a festive, jewel-like freshness.
Serves: 8 people
Ingredients
- Eggs – 4
- Sugar – 120 g
- Flour – 100 g
- Cocoa powder – 20 g
- Dark chocolate – 200 g
- Whipping cream – 300 ml
- Mixed red berries – 150 g
- Powdered sugar – 40 g
- Butter – 25 g
Method
Bake a light cocoa sponge in a lined tray and roll it up while still warm so it keeps its shape.
Melt the chocolate with the butter and leave it to cool slightly.
Whip the cream to soft peaks and fold it into the chocolate to make a light mousse.
Unroll the sponge, spread over the mousse and scatter with well-drained red berries.
Roll the log back up carefully and chill it until the filling is firm.
Spread any remaining mousse over the outside or pipe it on in festive swirls.
Decorate with a few extra berries and a dusting of icing sugar before serving.
