Chorizo in red wine is a bold Spanish tapa where spiced sausage cooks briefly in a rich, dark sauce.
Why cook chorizo in red wine?
As chorizo heats, it releases paprika, fat and spices into the sauce. Red wine absorbs those flavours and turns them into an intense sauce that is perfect for mopping up with bread.

Ingredients
- chorizo, sliced – 10 oz
- red wine – 3/4 cup
- bay leaf – 1
- honey – 1 tsp
- fresh parsley, chopped – 1 tbsp
Method
1. Place the chorizo, red wine and bay leaf in a small pan.
2. Bring to a gentle simmer and cook for 10 minutes.
3. Stir in the honey and cook for 2 minutes more until the sauce is lightly syrupy.
4. Remove the bay leaf and sprinkle with parsley.
5. Serve warm with toothpicks and bread.
