Few dishes feel more elemental than this Choctaw bowl of hominy and pork simmered for hours until the flavors truly merge.

Ingredients
- Dried cracked hominy – 350 g
- Pork ribs or shoulder, diced – 500 g
- Water – 2.5 l
- Salt – to taste
Method
Rinse and soak the hominy for several hours.
Put it in a pot with the water and bring it slowly to a boil.
Simmer gently and stir often so the corn does not catch.
When the hominy starts to soften, add the pork.
Cook for several more hours until the corn is soft, the meat is tender and the liquid is thick and brothy.
Serve hot and let everyone season with salt at the table.
