Chocolate mousse with sour cherries

Dark chocolate mousse topped with spoonfuls of sour cherries for a dessert that balances richness with bright fruit.

Serves: 6 people

Preparation time: 180 min

Ingredients

  • dark chocolate – 7 oz
  • butter – 2 tbsp
  • eggs, separated – 3
  • granulated sugar – 3 tbsp
  • heavy cream – 3/4 cup
  • pinch of salt – 1

For the cherries

  • jarred sour cherries with juice – 1 3/4 cups
  • cornstarch – 2 tsp
  • cold water – 1 tbsp

Method

1. Melt the chocolate with the butter in a heatproof bowl over barely simmering water. Let it cool until just warm.
2. Beat the egg yolks with 1 tablespoon of the sugar and stir them into the melted chocolate.
3. Whip the cream until softly thickened and fold it into the chocolate mixture.
4. Whisk the egg whites with the salt until foamy, then gradually add the remaining sugar and whisk to soft peaks. Fold the egg whites gently into the mousse. Spoon into glasses and chill for at least 3 hours.
5. Warm the sour cherries with their juice in a small saucepan. Stir the cornstarch with the cold water, whisk it into the cherries and simmer briefly until lightly thickened. Cool slightly or chill completely.
6. Spoon the cherries over the chocolate mousse just before serving.
