Chocolate bread and butter pudding

This is comfort dessert in the best possible way: slices of bread soaking up a rich chocolate custard until the edges turn golden and the middle stays soft. It is homely, generous and far more impressive than the humble ingredients suggest.

Serves: 8 people

Ingredients

  • White bread or brioche – 10 slices
  • Unsalted butter, softened – 80 g
  • Dark chocolate, chopped – 180 g
  • Whole milk – 300 ml
  • Double cream – 300 ml
  • Eggs – 4
  • Caster sugar – 80 g
  • Vanilla extract – 1 tsp
  • Pinch of salt – 1

Method

1. Heat the oven to 170°C and butter an oven dish generously.
2. Butter the bread on one side and cut the slices into triangles.
3. Scatter some chopped chocolate in the dish, then layer in the bread, overlapping the slices and tucking in more chocolate as you go.
4. Heat the milk and cream until warm, then take off the heat and let the remaining chocolate melt into it.
5. Whisk the eggs with the sugar, vanilla and salt, then whisk in the warm chocolate milk.
6. Pour the custard over the bread and press the slices down lightly so they absorb the liquid. Leave it to stand for 20 minutes.
7. Bake until the top is bronzed and the middle is just set.
8. Let it rest briefly before serving so the pudding slices more neatly and the custard settles.
