A rich northern-style noodle soup with tender beef, aromatic broth and chewy noodles, perfect as a full meal in one bowl.
Serves: 6 people

Ingredients
- beef chuck, cubed – 1 1/2 lb
- fresh noodles – 1 lb
- yellow onion, quartered – 1
- ginger, sliced – 2 inch
- garlic, smashed – 4 cloves
- soy sauce – 1/4 cup
- dark soy sauce – 1 tbsp
- star anise – 2
- cinnamon stick – 1
- beef stock – 10 cups
- bok choy – 4 small heads
- scallions, sliced – 3
- salt – to taste
Method
1. Brown the beef in a heavy pot, then add the onion, ginger and garlic.
2. Pour in the stock, soy sauces, star anise and cinnamon and simmer for about 1 1/2 hours until the beef is tender.
3. Cook the noodles separately according to the package instructions.
4. Blanch the bok choy briefly in the broth during the last minutes of cooking.
5. Divide the noodles over bowls, top with beef and bok choy, ladle over the broth and finish with scallions.
