White asparagus gives this cold soup a refined Dutch touch. Lemon and chives keep the flavor elegant and fresh.

Ingredients
- white asparagus, peeled and sliced – 1 1/4 lb
- butter – 2 tbsp
- shallot, chopped – 1
- flour – 1 tbsp
- vegetable stock – 3 cups
- heavy cream – 3/4 cup
- lemon zest – 1 tsp
- lemon juice – 1 tbsp
- fresh chives, chopped – 2 tbsp
- salt – 3/4 tsp
- white pepper – 1/4 tsp
Method
1. Melt the butter in a saucepan and cook the shallot for 3 minutes. Add the asparagus and cook for 2 minutes.
2. Stir in the flour, then gradually add the stock while stirring to keep the soup smooth.
3. Simmer for 15 minutes until the asparagus is tender, then blend the soup and strain it if you want an extra silky texture.
4. Stir in the cream, lemon zest, lemon juice and chives, season with salt and white pepper, and chill well before serving.
