Chicken with apple sauce is one of those Belgian family dishes that keeps showing up because children genuinely enjoy it. The savoury chicken and soft, sweet apples balance each other beautifully, especially when served with fries or potatoes.

Ingredients

  • Chicken pieces – 1.2 kg
  • Apples – 6, peeled and chopped
  • Butter – 50 g
  • Sugar – 1 tbsp
  • Lemon juice – 1 tbsp
  • Potatoes or fries – to serve
  • Salt – to taste
  • Black pepper – to taste

Method

Season the chicken well and brown it in butter until the skin takes on a rich golden colour.

Transfer the chicken to the oven or continue gently in a covered pan until it is fully cooked and the juices run clear.

Meanwhile cook the apples with a little butter, sugar and lemon juice until they collapse into a soft apple sauce.

Taste the apple sauce and adjust the balance. Some apples are sweeter than others, so a touch more lemon or sugar may help.

Serve the chicken with the warm apple sauce and a simple side such as fries, roast potatoes or a green salad.
