Chicken salad is at its best when the chicken stays juicy and the dressing supports instead of smothering it. Celery gives crunch, and a little mustard keeps the filling lively.
Serves: 4 people

Ingredients
- Cooked chicken, shredded or chopped – 400 g
- Mayonnaise – 4 tbsp
- Dijon mustard – 1 tbsp
- Celery, finely diced – 2 stalks
- Red onion, finely chopped – 2 tbsp
- Parsley or chives – 2 tbsp
- Soft bread or sandwich rolls – 8 slices or 4 rolls
- Salt and black pepper – to taste
Method
1. Place the chicken in a bowl and loosen it with your fingers or two forks so the dressing can coat it evenly.
2. Mix in the mayonnaise, mustard, celery, onion and herbs.
3. Season well and chill briefly if you have time. The flavor improves when the filling rests a little.
4. Pile the chicken salad onto bread or rolls and serve as a simple cold lunch.
