Homemade chicken nuggets are a smart answer when you want something children recognise, but still want to cook from scratch. They come out crisp on the outside, juicy inside and pair beautifully with a simple salad, mash or oven chips.

Ingredients
- Chicken breast – 600 g
- Plain flour – 75 g
- Eggs – 2, beaten
- Breadcrumbs – 150 g
- Paprika – 1 tsp
- Garlic powder – 1 tsp
- Salt – to taste
- Black pepper – to taste
- Oil – for brushing
Method

Cut the chicken into bite-sized pieces and gently flatten the thicker pieces so everything cooks evenly.

Season the flour with paprika, garlic powder, salt and pepper. Put the beaten eggs in a second bowl and the breadcrumbs in a third.

Coat the chicken first in the flour, then in the egg and finally in the breadcrumbs, pressing lightly so the crumbs stick well.

Arrange the nuggets on a lightly oiled baking tray and brush or spray them with a little oil for a better golden crust.

Bake until crisp and cooked through, turning once halfway if needed so they colour evenly on both sides.

Serve straight away while the coating is still crunchy. A simple yogurt dip or ketchup works well alongside them.
