A tomato rice skillet with chicken, peppers and Cajun spice, naturally gluten-free and deeply comforting.

Serves: 4 people

Preparation time: 9 min

Ingredients

  • Olive oil – 1 tbsp
  • Chicken thigh fillets – 500 g
  • Onion – 1
  • Celery – 2 stalks
  • Green bell pepper – 1
  • Garlic – 2 cloves
  • Cajun seasoning – 2 tsp
  • Long grain rice – 300 g
  • Canned tomatoes – 400 g
  • Chicken stock – 700 ml
  • Spring onions – 2

Method

STEP 1 Brown the chicken in oil, then remove.
STEP 2 Fry onion, celery, pepper and garlic. Add Cajun seasoning.
STEP 3 Stir in rice, tomatoes and stock, return the chicken and simmer until the rice is cooked.
STEP 4 Rest for a few minutes and finish with spring onions.
