Kippenhartjes are pleasantly chewy, savoury and made for the grill. A perfect gateway dish into the world of lesser-loved cuts.

Ingredients

  • Chicken hearts – 500 g
  • Soy sauce – 4 tbsp
  • Mirin – 3 tbsp
  • Sake – 2 tbsp
  • Sugar – 1 tbsp
  • Spring onion – 2

Method

Mix soy, mirin, sake and sugar into a glaze. Thread the hearts onto skewers and grill, brushing with glaze until glossy and cooked through. Serve with sliced spring onion.
