A sizzling pan of seasoned chicken and peppers wrapped in warm tortillas.

Ingredients
- chicken breast – 300 g
- bell peppers – 2
- onion – 1
- tortillas – 4
- fajita spices – 2 tsp
- lime – 1
Method
STEP 1
Slice the chicken, peppers and onion into thin strips so everything cooks quickly and evenly. Toss the chicken with the fajita seasoning and a little oil.
STEP 2
Heat a large frying pan or griddle until hot and cook the chicken until golden and just cooked through. Remove it from the pan so it stays juicy.
STEP 3
Cook the peppers and onion in the same pan until they pick up a little colour but still keep some bite. That slight char gives fajitas much more flavour than simply steaming the vegetables.
STEP 4
Return the chicken to the pan and squeeze over the lime juice. Toss everything together for 30 seconds so the juices coat the filling.
STEP 5
Warm the tortillas briefly, fill them with the chicken mixture and serve at once.
