All the flavours of chicken fajitas served as a gluten-free rice bowl with peppers and lime.
Serves: 4 people
Preparation time: 50 min
Ingredients
- Chicken breast – 500 g
- Olive oil – 1 tbsp
- Fajita spices – 2 tsp
- Red bell pepper – 1
- Yellow bell pepper – 1
- Onion – 1
- Cooked rice – 500 g
- Avocado – 1
- Lime – 1
- Coriander – 1 handful
Method
STEP 1 Toss the chicken with oil and fajita spices and cook until golden.
STEP 2 Stir-fry the peppers and onion until just tender.
STEP 3 Divide rice between bowls and top with chicken, vegetables and avocado.
STEP 4 Finish with lime juice and coriander.
