A creamy chicken curry salad tucked into soft rolls is a familiar and very popular coffee table favorite in Belgium and the Netherlands.

Serves: 8 people

Preparation time: 20 min

Ingredients

  • Soft sandwich rolls – 10
  • Cooked chicken breast – 300 g
  • Mayonnaise – 150 ml
  • Greek yogurt – 2 tbsp
  • Curry powder – 2 tsp
  • Apple – 1 small
  • Celery stalk – 1
  • Lemon juice – 1 tbsp
  • Salt – to taste
  • Black pepper – to taste

Method

Dice or shred the cooked chicken finely. Peel and dice the apple very small and chop the celery. Mix the mayonnaise with the yogurt, curry powder, lemon juice, salt and pepper. Stir in the chicken, apple and celery until everything is evenly coated. Taste and adjust the seasoning if needed. Slice the rolls open and fill them generously with the chicken curry salad. Keep chilled until serving.
