Chicken broth with mini meatballs

A clear chicken soup gains extra substance from tiny meatballs. It is an easy family soup that wins people over quickly.

Serves: 4 people

Preparation time: 13 min

Ingredients

  • chicken stock – 6 cups
  • carrots, small dice – 2
  • leek, sliced into half-rings – 1
  • celery, sliced – 1 stalk
  • ground beef – 9 oz
  • breadcrumbs – 1/4 cup
  • egg – 1
  • parsley, chopped – 2 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/4 tsp

Method

1. Mix the beef with the breadcrumbs, egg, 1 tablespoon of the parsley, half the salt and the pepper. Shape into small meatballs.
2. Bring the stock to a boil and add the carrots, leek and celery. Simmer for 8 minutes.
3. Lower the meatballs into the broth and simmer gently for 8 more minutes.
4. Season the soup with the remaining salt.
5. Finish with the remaining parsley and serve hot.
