Chicken biryani is a fragrant rice dish where spiced chicken and rice come together in a rich, aromatic meal.
What is biryani?
Biryani is a South Asian rice dish built around spices, aroma and layers. The chicken flavours the rice, while herbs and aromatics create the warm fragrance that makes biryani so recognisable.

Ingredients
- basmati rice – 1 1/2 cups
- chicken thigh, diced – 1 lb
- plain yogurt – 3/4 cup
- onion, sliced – 2 medium
- garlic, minced – 3 cloves
- ginger, grated – 1 tbsp
- diced tomatoes – 1 cup
- garam masala – 2 tsp
- ground cumin – 1 tsp
- ground coriander – 1 tsp
- turmeric – 1/2 tsp
- chili powder – 1/2 tsp
- vegetable oil – 3 tbsp
- water – 2 1/2 cups
- salt – 1 1/2 tsp
- cilantro, chopped – 2 tbsp
Method
1. Marinate the chicken with yogurt, half of the spices and a little salt for 20 minutes.
2. Fry the onions in oil until golden, then add garlic, ginger, tomatoes and the remaining spices.
3. Add the chicken and cook until lightly browned.
4. Stir in the rice and water, cover and cook on low heat until the rice is tender.
5. Rest for 10 minutes and finish with chopped cilantro.
