Soft corn-husk parcels of masa and beans make this Cherokee favorite feel comforting, earthy and quietly special.

Ingredients
- Masa harina – 350 g
- Cooked brown or pinto beans, mashed – 250 g
- Warm bean broth or water – 350 ml
- Baking powder – 1 tbsp
- Salt – 1 tsp
- Corn husks, soaked – 12
Method
Set up a steamer with simmering water.
Mix the masa harina, mashed beans, baking powder and salt in a bowl.
Pour in the warm bean broth little by little and mix until you have a thick, spreadable dough.
Place a spoonful of the mixture on each soaked corn husk and fold the husks closed.
Steam the parcels for 45 to 55 minutes until they feel firm.
Let them rest for 5 minutes, unwrap and serve warm.
