Cheeseburger soup is a rich American comfort soup with ground beef, potatoes and melted cheese. It is surprisingly round and creamy in flavor.

Ingredients
- ground beef – 14 oz
- onion, finely chopped – 1
- carrot, finely chopped – 1
- potatoes, small dice – 14 oz
- chicken or beef stock – 5 cups
- butter – 2 tbsp
- all-purpose flour – 2 tbsp
- milk – 1 2/3 cups
- cheddar, grated – 7 oz
- oil – 1 tbsp
- salt – 1/2 tsp
- black pepper – 1/2 tsp
- chives, chopped – 2 tbsp
Method
1. Heat the oil in a pot and brown the beef until crumbly. Remove it from the pot.
2. Melt the butter in the same pot and cook the onion and carrot for 4 minutes. Stir in the flour.
3. Add the stock and potatoes and simmer for 15 minutes, until the potatoes are tender.
4. Stir in the beef and milk, then add the cheddar. Heat until the cheese has melted. Season with salt and pepper.
5. Serve with chives on top.
