These neat quiche squares are easy to serve from a buffet and combine buttery pastry with a soft, savory custard full of herbs and cheese.

Ingredients
- Shortcrust pastry – 1 sheet
- Eggs – 4
- Cream – 200 ml
- Milk – 100 ml
- Grated cheese – 180 g
- Chives – 1 tbsp
- Parsley – 1 tbsp
- Thyme – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
Preheat the oven to 190°C. Line a rectangular tart tin or baking dish with the pastry and prick the base with a fork. Blind bake the pastry for 10 minutes. Whisk the eggs with the cream and milk until smooth. Stir in the cheese and herbs and season with salt and pepper. Pour the filling into the pre-baked crust. Bake for 25 to 30 minutes until the filling is set and lightly golden. Let the quiche rest before cutting it into neat squares.
