This Spanish garlic soup from Castile is simple yet surprisingly full of flavour. Bread, paprika, broth and egg turn it into a traditional winter soup.
Serves: 4 people

Ingredients
- olive oil – 3 tbsp
- garlic, thinly sliced – 6 cloves
- smoked paprika – 1 tsp
- day-old bread, torn into pieces – 5 oz
- diced ham or finely chopped serrano ham – 3 oz
- chicken broth – 4 cups
- eggs – 4
- salt – to taste
- black pepper – to taste
Method
1. Heat the olive oil in a pot and gently cook the garlic until fragrant but not brown.
2. Stir in the ham and smoked paprika and add the bread right away.
3. Pour in the broth and let the soup simmer gently for 10 minutes.
4. Crack the eggs into the soup and cook for 3 to 4 minutes until the whites are set.
5. Season with salt and pepper and serve immediately.
