A French-Belgian beer-braised beef casserole with onions and spiced bread.
Serves: 4 people

Ingredients
- stewing beef – 2 lb
- onions – 4
- butter – 3 tbsp
- flour – 1 tbsp
- dark beer – 12 fl oz
- beef stock – 1 cup
- red wine vinegar – 1 tbsp
- brown sugar – 1 tsp
- gingerbread – 2 slices
- mustard – 1 tbsp
- thyme – 2 sprigs
- bay leaves – 2
- salt – to taste
- black pepper – to taste
Method
1. Brown the beef in butter in batches and set aside.
2. Cook the onions in the same pot until soft.
3. Stir in the flour, then add the beer, stock, vinegar, sugar, thyme and bay.
4. Spread the gingerbread with mustard and place it on top of the stew.
5. Cover and simmer gently for 2 hours until the meat is tender and the sauce rich.
6. Stir, season and serve hot.
