An attractive inside-out sushi roll with creamy avocado, crisp cucumber and delicate crab, finished with sesame for a classic restaurant feel at home.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Imitation crab or cooked crab meat – 200 g
- Avocado – 2
- Cucumber – 1
- Toasted sesame seeds – 2 tbsp
- Mayonnaise – 2 tbsp
Method
Cook the rice and season it with rice vinegar, sugar and salt. Let it cool until just warm.
Mix the crab with the mayonnaise and cut the cucumber and avocado into thin batons.
Place nori on a bamboo mat, spread sushi rice over it and sprinkle with sesame. Turn the sheet over so the rice is on the outside.
Add crab, cucumber and avocado in a line, roll tightly and slice into bite-size pieces with a wet knife.
