Caldo galego is a hearty Galician soup with white beans, potatoes, greens and smoked pork. It is a warming rustic bowl for cold days.
Serves: 6 people

Ingredients
- dried white beans, soaked overnight – 1 1/4 cups
- potatoes, diced – 1 lb
- savoy cabbage or turnip greens, roughly chopped – 9 oz
- smoked bacon or ham hock pieces – 5 oz
- chorizo, sliced – 5 oz
- onion, chopped – 1
- garlic – 2 cloves
- water or stock – 7 cups
- salt – to taste
- black pepper – to taste
Method
1. Place the beans, bacon, onion, garlic and water in a large pot and bring to a boil.
2. Simmer for 45 minutes until the beans are almost tender.
3. Add the potatoes and chorizo and cook for 15 minutes.
4. Stir in the cabbage or turnip greens and simmer for another 10 to 12 minutes.
5. Season with salt and pepper and serve the soup piping hot.
