Caldo de res is a clear Mexican beef soup with large chunks of vegetables. It is a simple, nourishing meal soup for the whole family.

Serves: 4 people

Preparation time: 65 min

Ingredients

  • beef shank or soup meat – 1 1/2 lb
  • water – 8 cups
  • onion, halved – 1
  • garlic cloves – 2
  • carrots, cut into large pieces – 3
  • potatoes, cut into large chunks – 3
  • zucchini, sliced into half-moons – 1
  • corn on the cob, cut into pieces – 2
  • cabbage, cut into wedges – 7 oz
  • cilantro, roughly chopped – 2 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • limes – 2

Method

1. Put the beef, water, onion and garlic in a large pot. Bring to a boil, skim off any foam and simmer gently for 50 minutes.
2. Add the carrots, potatoes and pieces of corn and cook for 15 minutes.
3. Add the zucchini and cabbage and simmer for 10 more minutes.
4. Season with salt and pepper and stir in the cilantro.
5. Serve the soup with lime wedges at the table.
