Lightly coated fried squid rings with lemon are crisp on the outside, tender inside and one of the great tapas bar staples.
Serves: 6 people

Ingredients
- Squid tubes and tentacles, cleaned – 700 g
- Flour – 120 g
- Cornflour – 40 g
- Salt – to taste
- Black pepper – to taste
- Olive oil or frying oil – for frying
- Lemon – 1
Method
STEP 1
Cut the squid tubes into rings and pat both the rings and tentacles very dry with kitchen paper.
STEP 2
Mix the flour, cornflour, salt and pepper in a shallow bowl and toss the squid in the mixture just before frying.
STEP 3
Heat the frying oil to 180 degrees Celsius and fry the squid in small batches for 1 to 2 minutes only.
STEP 4
Lift the squid out with a slotted spoon and drain it on kitchen paper while you finish the rest.
STEP 5
Pile the fried squid onto a warm plate and serve immediately with lemon wedges.
