Cabbage roll soup gives you the familiar comfort of stuffed cabbage without the extra work of rolling leaves. Beef, rice, cabbage and tomato simmer together into a nourishing, old-fashioned meal soup.

Ingredients
- Butter – 2 tbsp
- Ground beef – 500 g
- Onion – 1 large, diced
- Garlic – 3 cloves, chopped
- White cabbage – 700 g, shredded
- Chopped tomatoes – 800 g
- Beef stock – 1 litre
- Tomato puree – 2 tbsp
- Long-grain rice – 120 g
- Bay leaf – 1
- Paprika – 1 tsp
- Brown sugar – 1 tsp
- Salt and pepper – to taste
Method
step 1
Cook the beef with the onion in butter until the meat is browned and the onion has softened.
step 2
Add the garlic, cabbage and tomato purée and stir until the cabbage starts to wilt.
step 3
Pour in the tomatoes and stock, then add the rice, bay leaf, paprika and brown sugar.
step 4
Simmer gently until the rice is tender and the cabbage has turned silky in the broth.
step 5
Season carefully and serve when the soup is rich and hearty.
