Butternut wraps with hummus, spinach and roasted seeds are easy, plant-based and ideal for lunch or a light meal.
Why use butternut in a wrap?
Roasted butternut gives wraps more substance and gentle sweetness. Hummus adds creaminess, spinach brings freshness and seeds provide the bite a good wrap needs.

Ingredients
- butternut squash – 12 oz, roasted and cooled
- large wraps – 4
- hummus – 1 cup
- baby spinach – 3 cups
- pumpkin seeds – 1/4 cup, toasted
- lemon juice – 1 tbsp
- olive oil – 1 tbsp
- salt – to taste
- black pepper – to taste
Method
STEP 1
Season the cooled roasted butternut with lemon juice, olive oil, salt and black pepper.
STEP 2
Spread each wrap with a generous layer of hummus.
STEP 3
Top with spinach, butternut and toasted pumpkin seeds.
STEP 4
Roll up tightly, slice in half and serve for lunch.
